A quick and delicious 5-minute breakfast sandwich featuring warm toasted sourdough, crisp thick-cut bacon, creamy avocado, and fluffy eggs. Perfect for busy mornings or elegant brunches.

- 2 slices thick-cut sourdough or brioche bread
- 3–4 strips thick-cut applewood-smoked bacon
- 1 large ripe avocado
- 2 large eggs
- 1 tbsp unsalted butter
- Sea salt and black pepper to taste
- Red pepper flakes (optional)
- Fresh chives or cilantro (optional)
Instructions
- Cook bacon in a cold skillet over medium heat for 8-10 minutes until crisp. Remove to a paper towel-lined plate, reserving 1 tbsp of bacon grease.
- Whisk eggs with salt and pepper. Cook in the reserved bacon grease over medium-low heat until just set (scrambled) or fry sunny-side up.
- Toast bread slices until golden brown and sturdy.
- Slice the avocado thinly. If mashing, mix with lemon juice, salt, and pepper.
- Assemble the sandwich: Place avocado on the bottom slice of bread, followed by eggs, then broken bacon pieces. Top with the second slice of bread.
- Sprinkle with red pepper flakes or fresh herbs if desired. Cut diagonally and serve immediately.
Notes
For best results, cook bacon first to render fat for the eggs. Use thick-cut bread to prevent sogginess. If using turkey bacon, add oil to the pan for cooking eggs. Store components separately to maintain texture.
