  • 1/2 cup full-fat mayonnaise
  • 1/2 cup freshly grated Pecorino Romano cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 23 cloves fresh garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Place chicken breasts on a cutting board and pound them to an even 1/2-inch thickness. Pat dry with paper towels.
  3. In a large shallow bowl, combine mayonnaise, Romano cheese, Parmesan cheese, minced garlic, oregano, basil, salt, and pepper. Mix until a thick paste forms.
  4. Dip each chicken breast into the mayo-cheese mixture, ensuring full coverage on both sides.
  5. Press the coated chicken firmly into the panko breadcrumbs, ensuring a thick, even layer. Place on the prepared baking sheet.
  6. Bake for 20-25 minutes, rotating the pan halfway through, until the internal temperature reaches 165°F (74°C) and the crust is golden brown.
  7. Remove from oven and immediately brush the tops with melted butter.

Notes

For even cooking, pound chicken breasts to 1/2 inch thickness. Do not overcrowd the pan to ensure the crust gets crispy. If the breadcrumbs are browning too quickly, cover loosely with foil for the last 10 minutes. Resting the chicken for 5 minutes helps retain juices.
