  • 1 cup panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons extra virgin olive oil
  • 1 lemon (zest and juice)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Kosher salt and freshly cracked black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine (optional, for deglazing)

Instructions

  1. Preheat oven to 400°F (200°C) and allow it to fully preheat for at least 10 minutes.
  2. In a small bowl, combine panko breadcrumbs, melted butter, olive oil, lemon zest, minced garlic, chopped parsley, salt, and pepper. Mix until crumbs resemble wet sand.
  3. Pat halibut fillets dry with paper towels and place them in a greased 9×13 inch baking dish. Season the top of each fillet lightly with salt and pepper.
  4. Divide the breadcrumb mixture evenly among the fillets, pressing gently to adhere. Ensure every piece is covered.
