Description
These roasted red potatoes are the gold standard for home roasting, featuring a shatteringly crisp exterior and a creamy, soft interior. Made with simple pantry ingredients like olive oil, garlic, and rosemary, this versatile side dish is quick to prepare and perfect for any occasion.
Ingredients
- 2 pounds medium red potatoes
- 3 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried rosemary
- ½ teaspoon dried thyme
- ½ teaspoon paprika
Instructions
- Preheat oven to 425°F (220°C).
- Wash potatoes thoroughly and cut into uniform 1-inch cubes or halves.
- In a small bowl, whisk together olive oil, salt, pepper, garlic powder, onion powder, rosemary, thyme, and paprika.
- Place potatoes in a large mixing bowl and pour the seasoned oil mixture over them.
- Toss thoroughly to ensure every piece is evenly coated.
- Spread potatoes in a single layer on a large rimmed baking sheet, ensuring they do not touch.
- Roast for 25 minutes, then remove and flip/toss the potatoes.
- Return to oven and roast for another 15-20 minutes until golden brown and crispy.
- Check for doneness by ensuring a fork slides easily into the center.
- Serve immediately while hot.
Notes
Do not overcrowd the pan to ensure crispiness rather than steaming. Uniform cuts are essential for even cooking. For extra crunch, broil for the last 2 minutes. Leftovers can be stored in the refrigerator for up to 3 days and reheated in an air fryer or toaster oven to restore crispiness.
