  • 1.5 lbs (680g) Jumbo or Extra-Large Shrimp, peeled and deveined
  • 4 tbsp (57g) Unsalted Butter
  • 2 tbsp (30ml) Extra Virgin Olive Oil
  • 45 cloves Fresh Garlic, minced
  • 1 large Lemon, juiced (approx. 3 tbsp / 45ml)
  • 1/4 cup (60ml) Dry White Wine (e.g., Sauvignon Blanc or Pinot Grigio)
  • 2 tbsp (5g) Fresh Parsley, chopped
  • 1/2 tsp (1g) Red Pepper Flakes
  • Kosher Salt and Black Pepper, to taste

Instructions

  1. Pat the shrimp thoroughly dry with paper towels to ensure a good sear. Season lightly with salt and pepper and let sit at room temperature for 10 minutes.
  2. Heat the Blackstone griddle to medium-high heat (375°F – 400°F / 190°C – 200°C). Test readiness by flicking water drops onto the surface; they should sizzle and evaporate instantly.
  3. Pour olive oil onto the griddle and spread evenly. Add butter and let it melt completely, swirling to coat the cooking area without burning.
  4. Lay shrimp in a single layer with space between them. Cook for 2-3 minutes on the first side until pink and opaque with a golden-brown crust. Flip and cook for another 1-2 minutes until curled in a ‘C’ shape.
  5. Push cooked shrimp to one side or remove to a plate. Add minced garlic and red pepper flakes to the empty space and sauté for 30 seconds until fragrant.
  6. Deglaze the griddle with white wine, scraping up browned bits. Let the wine reduce by half (1-2 minutes).
  7. Return shrimp to the sauce, toss to coat, and squeeze fresh lemon juice over everything. Sprinkle with parsley, toss once more, and remove from heat immediately.
  8. Serve warm with crusty bread, rice, or quinoa.

Notes

Do not overcrowd the griddle, as this causes steaming instead of searing. Cook in batches if necessary. Ensure shrimp are completely dry before cooking. Do not burn the garlic; add it towards the end of the cooking process. Shrimp are done when they form a ‘C’ shape; an ‘O’ shape indicates overcooking.
