Ingredients

  • 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup unsalted butter, cubed
  • 45 cloves fresh garlic, finely minced
  • 2 tablespoons dried parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Remove steak from fridge and let sit at room temperature for 15-20 minutes. Pat dry with paper towels.
  2. Cut steak into 1-inch cubes and place in a bowl.
  3. Season steak cubes generously with salt, black pepper, garlic powder, and onion powder. Toss to coat evenly.
  4. Heat a large skillet (preferably cast-iron) over medium-high heat. Add olive oil and heat until shimmering.
  5. Add steak cubes in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary).
  6. Sear steak for 2-3 minutes on one side until golden brown, then flip and cook for another 2 minutes until medium-rare.
  7. Remove steak from pan and set aside on a plate. Do not wipe out the pan.
  8. Reduce heat to medium-low. Add butter to the skillet and melt.
  9. Add minced garlic, dried parsley, thyme, red pepper flakes, and a pinch of salt. Stir constantly for 1-2 minutes until fragrant, being careful not to burn the garlic.
  10. Return steak bites to the pan and toss to coat in the herb butter sauce.
  11. Cook for another minute to meld flavors, taste and adjust seasoning, then serve immediately.

Notes

Do not overcrowd the pan to ensure a proper sear rather than steaming the meat. Ensure steak is very dry before seasoning for better browning. Do not overcook the steak; aim for medium-rare (130-135°F) as residual heat will continue cooking it. Store leftovers in the refrigerator for up to 3 days; reheat gently in a skillet to maintain moisture. Do not freeze with the butter sauce as the texture may become grainy.
