  • 1.5 pounds Ribeye or Sirloin steak
  • 1 stick (1/2 cup) Unsalted Butter
  • 46 cloves Garlic, thinly sliced
  • 1 cup Heavy Cream
  • 1 pound Fettuccine or Linguine
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 teaspoon Red Pepper Flakes
  • 1 handful Fresh Parsley, chopped
  • 2 tablespoons Olive Oil
  • Salt and Black Pepper, to taste
  • Reserved pasta water, as needed

Instructions

  1. Take the steak out of the fridge 20 minutes before cooking. Pat dry with paper towels and season generously with salt and black pepper.
  2. Bring a large pot of salted water to a boil. Add pasta and cook until about one minute before al dente. Reserve one cup of pasta water before draining.
  3. Heat a large skillet over medium-high heat. Add olive oil and let it get shimmering hot.
  4. Sear the steak in the pan for 3-4 minutes without moving it to develop a crust. Flip and cook for another 3-4 minutes for medium-rare. Remove to a plate and tent with foil to rest.
  5. Reduce heat to medium-low. Add butter to the same pan and let it melt and foam. Add sliced garlic and red pepper flakes, cooking for about one minute until fragrant but not brown.
  6. Pour in heavy cream, stirring to scrape up browned bits from the bottom of the pan. Simmer gently for 2-3 minutes until slightly thickened.
  7. Add the drained pasta to the skillet with the sauce. Toss to combine, then add Parmesan cheese and toss until melted and glossy. Add reserved pasta water if the sauce is too thick.
  8. Slice the rested steak against the grain into thin strips. Arrange over the pasta, garnish with fresh parsley, and serve immediately.

Notes

For best results, do not overcrowd the pan when searing the steak. Always slice the steak against the grain to ensure tenderness. Do not skip the reserved pasta water, as it helps emulsify the sauce. If making dairy-free, swap butter for olive oil and use plant-based cream. For gluten-free, use gluten-free pasta brands like Barilla or Banza.
