Instructions

  1. Prepare the corn: If using fresh corn, cut kernels off the cob. For smoky flavor, char kernels in a dry skillet over medium-high heat for 3-4 minutes until black spots appear. Let cool. If using frozen corn, thaw and pat dry thoroughly.
  2. Make the dressing: In a small bowl, whisk together mayonnaise, sour cream, lime juice, lime zest (optional), chili powder, garlic powder, salt, and black pepper until smooth.
  3. Combine: Pour the dressing over the prepared corn and toss gently to coat every kernel evenly.
  4. Add mix-ins: Fold in the crumbled cotija cheese, diced jalapeño, and chopped cilantro. If using avocado, fold it in gently at the end.
  5. Chill and serve: Refrigerate for at least 30 minutes to allow flavors to meld. Garnish with extra chili powder and cilantro before serving.

Notes

For best results, pat frozen corn dry to prevent a watery salad. The salad improves in flavor after chilling for 30 minutes. If making ahead, add avocado just before serving to prevent browning. Do not freeze this salad as the dairy and fresh ingredients will separate and become mushy.
