Ingredients

  • Boneless, skinless chicken thighs (cut into 1-inch cubes)
  • Yukon Gold potatoes (peeled and sliced into 1/8-inch rounds)
  • Heavy cream
  • Low-sodium chicken broth
  • Sharp cheddar cheese (block, grated)
  • Fresh garlic cloves (minced)
  • Yellow onion (diced)
  • Dried thyme
  • Dried rosemary
  • Kosher salt
  • Black pepper
  • Butter (for sautéing)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Pat chicken thighs dry and cut into bite-sized pieces. Toss with salt, pepper, and half of the dried thyme in a bowl.
  3. Slice potatoes into uniform 1/8-inch rounds and place in a large bowl.
  4. In a skillet, melt butter over medium heat. Sauté diced onion for 3-4 minutes until translucent, then add minced garlic and cook for 30 seconds. Remove from heat.
  5. In a separate bowl, whisk together heavy cream, chicken broth, remaining thyme, rosemary, salt, and pepper. Stir in the sautéed onion and garlic mixture.
  6. Pour the cream mixture over the sliced potatoes and toss to coat. Let sit for 10 minutes.
  7. Spread the potato mixture evenly in the prepared baking dish. Layer the seasoned chicken on top.
  8. Pour any remaining cream mixture over the chicken and sprinkle with grated cheddar cheese.
  9. Cover tightly with aluminum foil and bake for 45 minutes.
  10. Remove foil and bake uncovered for 15-20 minutes until the top is golden brown and potatoes are tender.
  11. Let rest for 10 minutes before serving to allow the sauce to thicken.

Notes

For best results, slice potatoes uniformly to ensure even cooking. Do not skip the 10-minute resting time after baking, as it allows the sauce to thicken. If using chicken breasts, reduce cooking time to prevent drying out. This recipe is naturally gluten-free but check broth and cheese labels. Can be made dairy-free by swapping cream for coconut milk and cheese for dairy-free alternatives.
