  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sharp white cheddar cheese, shredded
  • 1 cup fresh spinach, packed
  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Crumble the feta cheese into pea-sized pieces and shred the sharp white cheddar. Rinse and pat the fresh spinach dry to remove excess moisture.
  2. Spread a thin, even layer of softened butter on one side of each bread slice. Flip slices so buttered side is up.
  3. Sprinkle half the cheddar onto one slice, add the crumbled feta, then scatter the spinach leaves over the cheese. Top with remaining cheddar and feta.
  4. Place the second slice of bread on top, buttered side facing up, and press down gently.
  5. Heat a large, heavy-bottomed skillet (like cast iron) over medium-low heat for about 2 minutes.
  6. Place the sandwich in the pan and cook for 4-5 minutes until the bottom is deep golden brown.
  7. Carefully flip the sandwich and cook the second side for another 4-5 minutes. If needed, cover with a lid for the last minute to help melt the cheese.
  8. Remove from pan and let rest for 2 minutes before slicing diagonally and serving immediately.

Notes

Use medium-low heat to prevent burning the bread before the cheese melts. Grate your own cheese for better melting. Ensure spinach is completely dry to maintain crispiness. For a gluten-free option, use almond flour or gluten-free sourdough bread. Leftovers can be stored in the fridge for 2 days and reheated in a skillet.
