  • Salt, for pasta water and to taste
  • 1 cup reserved starchy pasta water

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package directions until al dente (8-10 minutes). Before draining, scoop out about 1 cup of starchy pasta water and set aside.
  2. While pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and sauté for 30-60 seconds until fragrant, being careful not to burn it.
  3. Pour in heavy cream and broth. Stir to combine and let the mixture come to a gentle simmer for 2-3 minutes until it starts to thicken slightly. Do not boil vigorously.
  4. Reduce heat to low. Gradually add grated Parmesan and shredded Cheddar cheese, stirring constantly until melted and smooth. If the sauce is too thick, add a splash of reserved pasta water.
  5. Drain pasta and add it directly to the skillet with the sauce. Toss everything together over low heat for about 1 minute until fully coated.
