Soft, chewy, and nutritious no-bake breakfast bites made with oats, peanut butter, and honey. Perfect for busy mornings and meal prepping.

- 2 cups (200g) Old-Fashioned Rolled Oats
- 1/2 cup (120g) Natural Peanut Butter
- 1/3 cup (110g) Honey
- 2 tablespoons (15g) Chia Seeds
- 1 teaspoon (5ml) Vanilla Extract
- 1/4 teaspoon Salt
- 1/2 cup (85g) Dark Chocolate Chips
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
- In a large bowl, combine the peanut butter, honey, and vanilla extract. Whisk until smooth. If the peanut butter is cold, microwave for 15 seconds to soften.
- Add the rolled oats, chia seeds, and salt to the wet mixture. Stir well with a spatula until every oat is coated.
- Gently fold in the dark chocolate chips.
- Transfer the mixture into the prepared pan. Press down firmly and compact it as much as possible using the back of a spoon or hands.
- Place the pan in the refrigerator and chill for at least 30 minutes (or freeze for 15 minutes) until firm.
- Lift the block out using the parchment paper and cut into 12 equal squares using a sharp knife or pizza cutter.
- Store in an airtight container.
Notes
Ensure peanut butter is creamy and not separated. Press the mixture firmly into the pan to prevent crumbly bites. For a vegan version, substitute honey with maple syrup and use dairy-free chocolate chips. Store in the fridge for up to one week or freeze for up to three months.
