A creamy, rich, and decadent chocolate pudding made with silken tofu and cocoa powder. This high-protein, gluten-free dessert is ready in under 15 minutes of active time and serves as a perfect post-workout treat or healthy indulgence.

- 1 block (approx. 12.3 oz or 350g) silken tofu
- 1/4 cup (25g) unsweetened cocoa powder
- 1/2 cup (120ml) almond milk (or milk of choice)
- 3–4 tbsp (45-60ml) maple syrup or honey
- 1 tbsp (16g) almond butter or peanut butter
- 1 tsp (5ml) vanilla extract
- Pinch of salt
- Optional: Dark chocolate chips or shavings for garnish
Instructions
- Open the package of silken tofu and drain the excess water. If the tofu feels very watery, gently pat it with a paper towel.
- Add the silken tofu, cocoa powder, almond milk, maple syrup, almond butter, vanilla extract, and salt to a high-speed blender.
- Blend on high speed for 60-90 seconds, stopping to scrape down the sides with a spatula if needed, until the mixture is completely smooth and creamy.
- Taste the mixture and adjust sweetness or thickness by adding more maple syrup or almond milk as needed. Blend for another 30 seconds to combine.
- Transfer the pudding into serving bowls or jars. Cover and refrigerate for at least 30 minutes to allow flavors to meld and texture to set.
- Serve chilled, topped with fresh berries, cocoa powder, or dark chocolate chips.
Notes
Ensure you use silken tofu, not firm tofu, for a smooth texture. For a thicker pudding, chill ingredients beforehand. The pudding can be stored in the fridge for up to 5 days or frozen for up to one month. If using protein powder, add extra liquid to compensate for absorbency.
