Description
A quick, high-protein taco bowl that combines seasoned ground turkey, black beans, corn, and fresh toppings over a base of brown rice or quinoa. This meal is ready in under 20 minutes, making it perfect for busy weeknights, gym fuel, or healthy meal prep.
Ingredients
- 1 lb (450g) lean ground turkey (93% lean or higher)
- 1 can (15 oz / 425g) black beans, rinsed and drained
- 1 cup (150g) corn kernels (frozen or fresh)
- 2 tbsp taco seasoning (homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, and salt)
- 1 medium red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 2 large avocados, sliced or diced
- 2 limes, freshly squeezed
- 1/2 cup plain, non-fat Greek yogurt
- 2 cups cooked brown rice or quinoa
Instructions
- Cook the grains: Rinse 1 cup of brown rice and combine with 2 cups of water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 40-45 minutes. If using quinoa, simmer for 15 minutes. Fluff with a fork and set aside.
- Prepare the vegetables: Dice the red onion and chop the cilantro. Slice the avocados last to prevent browning. Keep lime halves ready for juicing.
- Rinse and drain: Place the black beans and corn in a colander and rinse under cold water until bubbles disappear to remove excess sodium and starch.
- Cook the meat: Heat a large skillet over medium-high heat. Add the ground turkey and break it up with a spatula into small crumbles. Cook until no longer pink, about 5-6 minutes. Drain excess liquid if necessary.
- Season the meat: Sprinkle the taco seasoning over the cooked turkey. Add 2-3 tablespoons of water to help the spices adhere and create a light sauce. Stir well and simmer for 2 minutes.
- Warm the beans and corn: Push the turkey to one side of the skillet or remove it temporarily. Add the rinsed beans and corn to the empty side. Sauté for 2 minutes with a pinch of salt and cumin, then mix everything together.
- Assemble the bowls: Place a scoop of warm rice or quinoa in the bottom of a bowl. Top with the turkey, bean, and corn mixture. Arrange diced onion, cilantro, and avocado slices on top. Squeeze fresh lime juice over everything and dollop with Greek yogurt.
Notes
Never skip rinsing the beans to improve flavor. Let the turkey sear for a minute before stirring to create crispy bits. Toast spices in a dry pan for 30 seconds before adding to meat to deepen flavor. Store components separately in the fridge to prevent sogginess; meat lasts 4 days, rice lasts 5 days. Add fresh toppings like avocado and cilantro only when ready to eat.
