Ingredients

  • Boneless, skinless chicken breasts
  • Fresh corn on the cob (kernels cut off)
  • Fresh cilantro, chopped
  • Lime (juice and zest)
  • Red onion, thinly sliced
  • Feta or Cotija cheese, crumbled
  • Ripe avocado, diced
  • Chili powder
  • Smoked paprika
  • Extra virgin olive oil
  • Salt and pepper

Instructions

  1. Season chicken breasts with salt, pepper, and half of the chili powder.
  2. Heat a grill or cast iron skillet over medium-high heat with olive oil. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
  3. While chicken rests, char the corn kernels in the same hot skillet with a pinch of salt for 5-7 minutes until tender and slightly charred.
  4. In a small bowl, whisk together lime juice, lime zest, olive oil, remaining chili powder, smoked paprika, and a pinch of salt to make the dressing.
  5. Slice red onion into thin half-moons (soak in cold water for 10 minutes to mellow flavor if desired) and chop cilantro.
  6. In a large mixing bowl, combine sliced chicken, charred corn, red onion, and cilantro.
  7. Pour dressing over the mixture and toss gently to coat.
  8. Add crumbled feta or cotija cheese and diced avocado. Toss one more time.
  9. Serve immediately while the corn is still slightly warm.

Notes

For meal prep, store the chicken and corn separately from the avocado and cheese. Add avocado and cheese right before serving to prevent browning and mushiness. The salad tastes better after sitting in the fridge for a day. Ensure chicken is not overcooked to maintain juiciness.
