Ingredients

  • 4 salmon fillets (about 6 ounces each, wild-caught preferred)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 large lemon (half juiced, half sliced)
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon sea salt (or to taste)
  • Freshly cracked black pepper
  • Pinch of red pepper flakes (optional)
  • Asparagus or broccoli (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper.
  3. Pat salmon fillets dry with paper towels and place on the prepared baking sheet, skin-side down.
  4. In a small bowl, whisk together olive oil, melted butter, minced garlic, dried dill, salt, and black pepper.
  5. Brush the mixture generously over the top of each salmon fillet.
  6. Place a thin slice of lemon on top of each fillet.
  7. Bake for 12-15 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Remove from oven and let rest for 2-3 minutes before serving.

Notes

Pat the fish dry to ensure seasoning sticks and prevent steaming. Let the salmon sit out for 10-15 minutes before cooking to ensure even baking. Do not overcrowd the pan. If edges brown too quickly, tent with foil. Leftovers store in the fridge for up to 3 days.
