  • 2 salmon fillets (center-cut, approx. 6 oz each)
  • 3 tablespoons honey
  • 2 tablespoons whole grain mustard
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • Juice of 1/2 lemon
  • Zest of 1/2 lemon
  • Salt and black pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. Remove salmon from fridge and let sit for 10-15 minutes to reach room temperature. Pat dry with paper towels and season both sides with salt and pepper.
  2. In a small bowl, whisk together honey, whole grain mustard, olive oil, minced garlic, and lemon juice until smooth.
  3. Preheat grill to medium-high heat (approx. 400°F/200°C). Clean grates thoroughly and oil them generously using a paper towel and tongs to prevent sticking.
  4. Place salmon fillets skin-side down on the grill. Close the lid and cook for 6-7 minutes without moving the fish to allow grill marks to form.
  5. Open the lid, brush a generous layer of the honey mustard glaze onto the top side of the fish. Carefully flip the fillets and brush the other side with glaze.
  6. Close the lid and cook for another 5-6 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove salmon from the grill and let rest for 2 minutes. Garnish with fresh dill or parsley and serve immediately with lemon wedges.

Notes

Honey burns easily, so watch the glaze closely. If it gets too dark, move the fish to a cooler part of the grill. Do not flip the salmon too early; let it release from the grates naturally to prevent tearing. Keep the lid closed to retain moisture. For a vegan version, substitute honey with maple syrup or agave nectar.
