Ingredients

  • 1/2 cup fresh orange juice
  • 2 tablespoons Dijon mustard
  • 3 tablespoons extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • Zest of 1 medium orange
  • 4 halibut fillets (approx. 6 ounces each)
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. In a small bowl, whisk together orange juice, Dijon mustard, olive oil, minced garlic, orange zest, salt, and pepper until emulsified.
  2. Place halibut fillets in a shallow dish or zip-top bag. Pour half of the marinade over the fish, reserving the other half for the glaze. Marinate at room temperature for 10-15 minutes.
  3. Preheat grill to medium-high heat (400°F-450°F). Clean grates thoroughly and oil them generously to prevent sticking.
  4. Pour the reserved marinade into a small saucepan. Simmer over medium heat until reduced by half and syrupy. Remove from heat.
  5. Pat fish dry with paper towels. Place fillets on the grill. Cook for 4 minutes on the first side without moving to allow searing.
  6. Flip the fish carefully. Brush the top with the reduced glaze. Cook for another 4-6 minutes on the second side.
  7. Fish is done when it flakes easily with a fork, is opaque throughout, and reaches an internal temperature of 145°F.
  8. Remove from grill and let rest for 2 minutes. Garnish with fresh parsley and serve with lemon wedges.

Notes

Do not marinate for too long as the acid can make the fish mushy. Ensure the grill grates are well-oiled to prevent sticking. If using bottled orange juice, choose ‘not from concentrate’ with no added sugar. Halibut can be substituted with swordfish, mahi-mahi, or salmon.
