A quick, savory, and melty lunch made with just turkey bacon, sharp cheddar cheese, and bread. This recipe delivers crispy, gooey comfort food in under 10 minutes.

- 4–6 slices thick-cut turkey bacon
- 2 slices Sharp Cheddar cheese (block cheese preferred)
- 2 slices Sourdough or Whole Wheat bread
- 1 tablespoon unsalted butter
- Optional: Thin slice of tomato or smear of Dijon mustard
Instructions
- Place turkey bacon slices in a cold skillet and turn heat to medium. Cook for 2-3 minutes per side until golden brown and crispy. Remove and drain on paper towels.
- Butter one side of each bread slice. This will be the outside of the sandwich.
- Place bread slices butter-side down in the skillet (or toast in a toaster). Layer cheese on the unbuttered side, then pile the crispy turkey bacon on top.
- Place the second slice of bread on top, butter-side up. Press gently and cook over medium-low heat until the bottom is golden brown.
- Flip the sandwich carefully and cook the other side for another 2 minutes.
- Remove from pan and let rest for 1 minute to allow cheese to set. Slice diagonally and serve immediately.
Notes
Do not use high heat as turkey bacon burns easily. Press the sandwich gently while cooking to help the cheese adhere. Using a lid for the last minute helps melt the cheese faster. Avoid microwaving leftovers as it makes the bread soggy; reheat in a skillet or air fryer.
