  • 1 lb Polish Sausage (Kielbasa), sliced into half-moon shapes
  • 1.5 lbs Waxy Potatoes (Yukon Gold or red), cut into 1-inch cubes
  • 1 large Yellow Onion, chopped into chunks
  • 2 tbsp Vegetable Oil or Olive Oil
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt (adjust to taste)
  • 1/2 tsp Black Pepper
  • 2 tbsp Fresh Parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and cut potatoes into uniform 1-inch cubes. Do not peel if desired.
  3. Slice the Polish sausage into 1/4-inch thick half-moons and chop the onion into similar-sized chunks.
  4. In a large bowl, toss potato cubes with vegetable oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
  5. Heat an oven-safe skillet over medium-high heat. Sear the sausage slices for 2-3 minutes until browned (optional but recommended).
  6. Add the seasoned potatoes and onions to the skillet with the sausage. Toss to combine.
  7. Roast in the preheated oven for 15 minutes.
  8. Remove skillet, shake or stir ingredients to prevent sticking, and return to oven for another 10-15 minutes.
  9. Check for doneness: potatoes should be fork-tender and golden brown, sausage slightly crispy.
  10. Remove from oven, sprinkle with fresh parsley, and let cool for 2-3 minutes before serving.

Notes

Ensure potatoes are cut into uniform 1-inch cubes to prevent mushiness. Do not overcrowd the pan to allow for proper roasting and crisping. Taste the sausage before adding extra salt as kielbasa can be salty. If onions brown too quickly, cover loosely with foil for the last few minutes.
