  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon cornstarch
  • Salt and black pepper to taste
  • 2 tablespoons neutral oil (avocado or vegetable)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 12 tablespoons sriracha (adjust to spice preference)
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced thinly
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Pat chicken thighs completely dry with paper towels. Season both sides generously with salt and pepper.
  2. Sprinkle a thin layer of cornstarch over the skin side of the chicken and press it in gently. Shake off excess.
  3. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, minced garlic, and grated ginger. Taste and adjust seasoning if needed.
  4. Heat oil in a large, heavy-bottomed skillet (preferably cast iron) over medium-high heat until shimmering.
  5. Place chicken thighs skin-side down in the skillet. Do not move them for 6-8 minutes to allow the skin to sear and crisp up.
  6. Flip the chicken and cook for another 4-5 minutes until the internal temperature reaches 165°F (74°C).
  7. Reduce heat to medium-low. Pour the Bang Bang sauce over the chicken.
  8. Toss the thighs in the pan to coat evenly and simmer for 2 minutes until the sauce thickens and glazes the chicken.
  9. Transfer to a plate, spoon extra sauce over the top, and garnish with sliced green onions and toasted sesame seeds.
  10. Serve immediately while the skin is still crisp.

Notes

Ensure chicken is completely dry before seasoning to guarantee crispy skin. Manage heat carefully as cast iron retains heat; lower burner if browning too fast. Toast sesame seeds in a dry pan for better flavor. Leftovers can be stored for up to 3 days and reheated in a skillet or air fryer to maintain crispiness.
