  • 2 tablespoons honey

  • Fresh lemon juice (squeeze)
  • Green onions, thinly sliced (for garnish)
  • Toasted sesame seeds (for garnish)
  • Sesame oil (for garnish, optional)

Instructions

  1. Pat salmon fillets dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. In a small bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, soy sauce, garlic powder, and lemon juice until smooth. Adjust spice/sweetness to taste and set aside.
  3. Heat a skillet (preferably cast iron) over medium-high heat. Add neutral oil and wait until it shimmers.
  4. Place salmon fillets in the pan, skin-side down. Cook for 4-5 minutes without moving until the skin releases naturally and is crispy.
  5. Flip fillets carefully and cook for another 3-4 minutes until opaque and flakes easily with a fork.
  6. Reduce heat to low. Spoon a generous amount of bang bang sauce over each fillet and let heat through for 30 seconds.
  7. Transfer to plates, drizzle with remaining sauce, and garnish with green onions and sesame seeds. Serve immediately.

Notes

Ensure salmon is completely dry before searing to achieve a crispy crust. Do not flip the fish too early; let the proteins set to prevent breaking. For a healthier option, bake at 400°F for 12-15 minutes. Sauce can be made ahead and stored in the fridge for up to one week.
