- 1 cup (240g) fresh or canned pineapple chunks (drained if canned)
- 1/4 cup (60ml) soy sauce (low-sodium recommended)
- 2 tablespoons (30g) brown sugar
- 1 tablespoon (15ml) rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon (8g) cornstarch (divided use: 1 tsp for pork, 1 tbsp for sauce)
- 2 tablespoons vegetable oil (divided use)
- 1 teaspoon sesame seeds, for garnish
- 2 stalks green onions, sliced, for garnish
- Pinch of salt
Instructions
- Slice the pork tenderloin against the grain into thin, bite-sized strips.
- In a bowl, toss the sliced pork with 1 teaspoon of cornstarch and a pinch of salt. Let it sit for 10 minutes.
- In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger until the sugar is mostly dissolved.
- Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat.
- Add the pork in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 2-3 minutes without moving, then flip and cook for another 1-2 minutes until just cooked through. Remove pork and set aside.
- Reduce heat to medium. Add remaining oil if needed, then add pineapple chunks. Sauté for 2-3 minutes until slightly caramelized.
- Pour the sauce mixture into the pan with the pineapple. Simmer for 1-2 minutes until the sauce bubbles and thickens.
- Return the cooked pork to the pan. Toss gently to coat in the sauce. Cook for 30 seconds to 1 minute to warm through.
- Taste and adjust seasoning if needed. Remove from heat immediately.
- Serve hot over steamed rice or noodles, garnished with toasted sesame seeds and sliced green onions.
Notes
Slice pork against the grain for maximum tenderness. Do not overcrowd the pan when searing pork, or it will steam instead of brown. If using canned pineapple, ensure it is well-drained to prevent a watery sauce. For a spicy kick, add red pepper flakes or Sriracha to the sauce.
